Healthy Chocolate Apricot Almond Balls

Dipped in your favorite chocolate, these apricot almond balls have mostly good-for-you ingredients.  Chocolate is good for you, isn’t it?

Toast about a cup of slivered almonds over medium-high heat in a dry skillet for about 5 minutes until you start to smell their fragrance; stir constantly.  Do not skip this step; something about the toasting brings out the flavor in the nuts that is missing if you don’t.

In a food processor, chop the toasted almonds, 1 1/2 cups dried apricots, 1 tablespoon brown rice syrup, 1/2 teaspoon cinnamon, and a little salt (less than 1/8 teaspoon).  Roll into balls and place on a cookie sheet lined with wax paper.

In the microwave, melt a 4 ounce bar of the best dark chocolate you can find.  Roll the balls in the chocolate to coat and place back on the wax paper.  Cool in refrigerator about 15 minutes until set.  Can be stored at room temperature, but they won’t last that long before they are all eaten.

Poached Egg in a Pouch

My mother’s favorite fast breakfast was a raw egg beaten into a hot cup of coffee with warm whole milk and sugar – with a biscotti for dipping. When she had more time, she made poached eggs.  I recently read about the Spanish Arzak egg – no fancy equipment needed.

Recipe for Poached Egg in a Pouch

Stretch a piece of plastic wrap across a small bowl, coating it with a little olive oil. Spray cans are good for this. Crack the egg into the middle of the plastic; sprinkle with a little salt; gather the plastic wrap around it, creating a small bundle and tie it at the top.

Boil water in a deep small pan; drop the egg bundle into the water and reduce hear to simmer. Cook for 5 minutes for a runny egg, more if you like it firmer.

Remove the egg bundle; unwrap and slide the egg onto an English muffin.

If You Give a Mouth a Cookie

Nothing substitutes for the real thing when you are hungry for a cookie.  I missed the Girl Scout cookies this year, but a friend told me about the limited edition ice cream.  So, I taste tested – took me almost the whole carton – but I decided – too much ice cream – not enough cookie.
